I love salads, but only when I am able to continually change them up. I eat all sorts of salads, and regularly keep servings of chopped lettuce with colored peppers ready to go. Then I may top with beans, taco meat, chicken, fruit, dried fruit, nuts, variety of cheeses, salsa, and dressing (in various combinations).

A favorite lately is… lettuce, feta cheese, strawberries/dried cranberries/grapes, onion, red/orange/yellow pepper, pecans/almonds/walnuts – either or all of the fruits, peppers, and nuts – with dressing… with or without chicken.

My favorite dressing lately is Brianna’s French Vinaigrette…
